1 pound shrimp, peeled and deveined

1 pound smoked sausage, sliced

1 bell pepper, diced

1 onion, chopped

3 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes, undrained

1 cup chicken broth

2 tablespoons Cajun seasoning

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 cup frozen corn (optional)


Instructions

Combine Ingredients: 

In the crockpot, layer the shrimp, sausage, bell pepper, onion, garlic, diced tomatoes, and corn (if using).

 

Season: 

Sprinkle the Cajun seasoning, salt, and black pepper over the top of the ingredients.

 

Add Broth: 

Pour the chicken broth over everything, ensuring the ingredients are submerged.

 

Cook: 

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the shrimp is cooked through and flavors have melded.

 

Serve: 

Once ready, give it a gentle stir. Garnish with chopped green onions and serve hot with rice or crusty bread.
