- 1 cup wild rice, rinsed and drained
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 8 ounces mushrooms, sliced
- 4 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 1 cup heavy cream or coconut milk
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prep the Vegetables: Dice the onion, slice the carrots and celery, and mince the garlic. Rinse the wild rice under cold water.
- Combine Ingredients: In a crockpot, combine the wild rice, onion, carrots, celery, mushrooms, garlic, broth, thyme, and rosemary. Stir to mix well.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the wild rice is tender.
- Add Creaminess: About 30 minutes before serving, stir in the heavy cream or coconut milk. Allow to heat through.
- Season and Serve: Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving.
