Ingredients

  • 1 cup wild rice, rinsed and drained
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 8 ounces mushrooms, sliced
  • 4 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Prep the Vegetables: Dice the onion, slice the carrots and celery, and mince the garlic. Rinse the wild rice under cold water.
  2. Combine Ingredients: In a crockpot, combine the wild rice, onion, carrots, celery, mushrooms, garlic, broth, thyme, and rosemary. Stir to mix well.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the wild rice is tender.
  4. Add Creaminess: About 30 minutes before serving, stir in the heavy cream or coconut milk. Allow to heat through.
  5. Season and Serve: Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving.
