- 2 medium sweet potatoes, peeled and cubed
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
- Slider buns of choice
- Toppings: avocado, lettuce, tomato, or your favorite condiments
Instructions
- Cook the Sweet Potatoes: In a large pot, boil the peeled and cubed sweet potatoes until tender, about 15-20 minutes. Drain and let cool slightly.
- Mash the Mixture: In a large bowl, mash the sweet potatoes with a fork or potato masher. Add the black beans, breadcrumbs, cumin, smoked paprika, chili powder, garlic powder, salt, and pepper. Mix until well combined.
- Form the Sliders: Shape the mixture into small patties, about the size of your slider buns. You should get around 8-10 sliders.
- Cook the Sliders: Heat olive oil in a skillet over medium heat. Cook each slider for about 4-5 minutes on each side, or until golden brown and crispy. Alternatively, bake them at 400°F (200°C) for 20-25 minutes, flipping halfway through.
- Assemble: Place the sliders on buns and top with your choice of toppings. Serve immediately and enjoy!
